The BEST chocolate cupcakes!!!

This recipe is inspired by Hershey's chocolate cake recipe, with a few modifications to make it slightly more dense and (in my opinion) more deliciously rich! It is SO chocolatey, full of flavor, and will hold up to lots of beautiful frosting!

Makes approx. 12-14 cupcakes.


1 c sugar

1/2 c + 6 tbsp all-purpose flour

6 tbsp Hershey's cocoa powder

3/4 tsp baking powder

3/4 tsp baking soda

1/2 tsp salt

1 egg, room temperature

1/4 c vegetable oil

1 tsp pure vanilla extract

1 c boiling water + 1 1/2 tsp instant espresso powder, dissolved

1 package Hershey's instant chocolate pudding mix


Directions: Preheat oven to 350 F and prepare cupcake pans with liners. Stir together dry ingredients in large mixing bowl. Add eggs, oil, and vanilla; beat on medium speed for 2 minutes. Stir in boiling water mixture. Pour into prepared pans and bake for approx. 20 minutes or until a toothpick comes out of the center clean. Enjoy!
